| CRACK CORN from MUDHOE.
This is the receipe for the carmel puffs that we gave everyone to eat on the trail.
Need 2 bags, 7 oz each, of Mike Sells Puffcorn Delites Movie Theater Butter Place the popcorn on 2 each 9x13 greased pans (sheet trays)
Use very large pan to cook in (baking soda will double the batch size) 2 cups of brown sugar 1 cup of butter (margarine) 1 1/2 cup of white corn syrup Boil these ingredients for 2 minutes
Then add 1 teaspoon of vanilla 1/2 teaspoon baking soda
Pour the syrup over the puffcorn and bake at 225 degrees for 1 hour, stirring every 15 minutes. Turn onto wax paper sprayed with Pam. Put in a zip lock bag when cooled.

| Pecan bars
2cups all-purpose flour 1/2cup sugar 1/8 tsp salt 3/4 cup butter, cut up 1cup firmly packed brown sugar 1 cup light corn syrup 1/2 cup butter 4 large eggs, lightly beaten 2-1/2 cups finely chopped pecans 1 tsp vanilla extract
Combine flour sugar, and salt in large bowl, cut in 3/4. Cup butter thoroughly with pastry blender until mixture resembles very fine crumbs. Press mixture evenly into a greased "13 x 9" pan, using a piece of plastic wrap to press crumb mixture firmly in pan. Bake at 350 deg for 17-20 minutes or until lightly brown.
Combine brown sugar, corn syrup, and 1/2 cup butter in a saucepan. Bring to a boil over medium heat, stirring gently. Remove from heat. Stir 1/4 of hot mixture into beaten eggs , add to remaining hot mixture. Stir in pecans and vanilla. Pour filling over crust. Bake at 350 deg for 34-35 min or until set. Cool completely in pan Ono a wire rack. Cut into bars.
